Green Chocolate Smoothie

I tried using chocolate milk in my smoothie for the first time yesterday! I'm a fan. I didn't use a lot of it, but it did change up the flavor quite a bit! I also didn't measure how much I used in this smoothie, usually I just throw what I feel like having in my blender. That way I get a slightly different smoothie each time I make one :-)

Sick day and pizza

I haven't been feeling too good these last few days. My allergies have been really bad, and i'm also trying to shake off a cold (in the middle of summer, how ironic).

I didn't make the most interesting dinner today. Some days I just don't feel like it, but let me tell you - it still tasted amazing. I cheated a little and bought myself a vegan/gluten-free pizza crust at the store and made myself a pizza. By cheating I mean I didn't make everything from scratch. I actually haven't had pizza in months, and the craving was real..

For my pizza sauce I mixed some crushed tomatoes, garlic, tomato paste and coconut sugar in a pan and let it simmer for just a couple of minutes.

Toppings: 

  • Zucchini
  • Tomato
  • Broccoli
  • Corn
  • Vegan mince
  • Vegan Mozzarella

I cooked the 'meat' while heating up the oven and I seasoned it with cumin, chili flakes and paprika powder. Once it was hot I threw all my toppings on my pizza, put it in the oven for about 12 minutes and that was that. Super simple but I really enjoyed it.

Improv dinner

I had absolutely no idea what I was gonna have for dinner last night, and I didn't want to go grocery shopping - so I started to look at what I already had at home. I ended up making a dressing/dip (I used it on top of my salad and to dip my fries in), sweet potato fries and a simple salad on the side.

Dressing/dip

  • 1/2 red pepper
  • 1/3 zucchini (the soft middle part)
  • 1 large stalk of celery
  • 1 small handful of scallion 
  • 1/3 avocado
  • the juice of 1/2 lemon
  • 1/4 cup mango
  • 1 tsp cumin
  • 1 tbsp tahini
  • 1/2 tsp chili flakes
  • 1 tsp chili powder
  • 1 tsp paprika powder
  • salt and pepper to taste 
Throw everything together in a blender/food processor and voilà! If the consistency ends up being too thick for your liking, add some water to it :-)



I always use paprika powder and cinnamon when I make my sweet potato fries. The sweetness from the cinnamon and the kick from the paprika.. I'm telling you. It's AMAZING. I don't use any oil on them. I just season them right after I rinse them, and they're ready to go! 220' C in the middle of the oven for about 30-40 minutes (depends how thick you cut them) flip them halfway through baking and they should be perfect. 



My salad was just some spinach, kale and romaine mixed with tomatoes and cucumber. I squeezed a lemon wedge over it and put my dressing on top. Super simple - but tasty. and good for you!

Breakfast

I always have fruit when I wake up. It makes me feel energized and satisfied, and it's just what works for me and my body. Usually i'll just make one large smoothie and sip on that, but I was visiting a friend and we didn't have enough fruit for the size I like to go for (don't think dirty, this is a food blog..) so this is what I ended up with.

A regular sized glass of smoothie made with banana, mango and ice - and some mango and a banana on the side. 




This will keep me full until lunch time, but if I feel like snacking i'll just grab some fruit!

Introduction

I don't really know where to start.. Hey?? Hello?
I am a 21 y/o girl from Norway. My name is Siw Linda (Linda is okay) and I love cooking. The kitchen is my favorite room, and yes, I spend a lot of time in there. Chopping vegetables is relaxing to me. I quit eating meat when I was 19, and I have now decided that I need to switch it up again. I have too many allergies for me to even write all of them down, and my atopic eczema flares up when I have gluten/yeast. It has gotten to a point now where I can't have one beer without getting rashes, and if I have regular pizza I look pregnant. The point i'm trying to make here is that I would much rather eat very simple, than to be in pain/not wanting to leave the house because I have red dots all around my eyes.   

I think this is going to be a place for me to post my recipes, food pics, and maybe some regular everyday stuff as well. Who knows! 


I don't really know how to end this either.. I promise to come back with a more interesting post later. x
